White Pudding with Blackened Surface


Instructions:

5 cups milk
1/3 cup wheat starch
1/3 cup rice flour
1 + 1/2 cups granulated sugar
1 pack vanilla
1 tbsp butter
1/3 cup castor sugar
 

# Add the starch and the rice flour into the cold milk, mix, cook over medium heat by stirring constantly until it reaches to the consistency of milk pudding, add sugar and mix, and remove from the stove.
# Add vanilla after removing the pot from the stove.
# Grease the oven tray with edges, sprinkle castor sugar all over.
# Pour the cooked milk pudding into the tray, flatten it.
# Place the oven tray over medium heat, caramelize the castor sugar, by changing the position of the oven tray time to time.
# Remove tray form the stove, place on separate tray which is full of cold water. Cool it down, remove the tray from water.
# Cut the dessert into squares after refrigerating it at least 2 hours. Serve with getting the blackened surface down.


Note: White pudding with blackened surface is incident to Istanbul.
