Vizier Pilaf
Instructions:
# Firstly, add 4 cups cold water onto the veal cubes. Boil them in the pot or pressure cooker, until they soften.
# Then pour the boiled mixture onto a colander. Drain its broth. If the gained broth is not enough, add water on it to get 4 cups of broth.
# Wash the rice with cold water and strain it, without resting in water.
# Put the vegetable oil into the pot and make it hot. Add rice in it, and roast it over medium heat for about 5 – 6 minutes. Add salt and 4 cups of broth in it, cover the lid of the pot.
# Firstly cook the pilaf over medium heat for 10 minutes, then cook it over low heat for 10 minutes (20 minutes total.). Place a paper towel between the pot and its lid.
# While resting the pilaf, prepare the mixture for upper side of the pilaf; put 3 tbsp vegetable oil into the pot and make it hot. Then add diced onion in it and roast until darkens.
# Add finely sliced banana pepper and boiled veal cubes in it, roast it for a few minutes. Add tomato paste, salt and green peas in it finally. Cover the lid of the pot and cook the mixture for 10 minutes. Remove the pot from the stove.
# Stir the rested pilaf gently and place it onto the service plate. Garnish it with the cooked mixture.
# Serve it hot.


Note: If you wish to cook vizier pilaf with fresh peas, you should boil them for about 15 -20 minutes before adding them into meat.

For Upper Side;
8.8ounces veal cubes
1 onion
1 cup canned green peas
1 banana pepper
1 tbsp tomato paste
3 tbsp vegetable oil
1 pinch salt
