Chestnut Cookies
Instructions:
# Make some cuts on the edges of the chestnuts, boil them in too much water. Decorticate the chestnuts totally.
# Put the chestnuts into pot, which is not aluminum, mash them totally by a fork, add 4 tbsp granulated sugar and 1/2 cup of water. Cook it over medium heat until it reaches to boiling temperature, and remove the pot from the stove.
# Add margarine in it, while the mixture is hot yet, mix it until the margarine melts totally. Add castor sugar in it.
# Add icing sugar into the mixture, after the mixture cool down totally. Add egg, vanilla and baking powder in it also.
# Knead the mixture by adding flour in it, until it reaches a soft-hard consistency.
# Pick walnut sized pieces from the dough, without resting it. Roll them between your palms and force on them a little to shape them as oval.
# Place the chestnut cookies onto the no-greased baking tray, with some spaces between them. Bake them in the 374 F oven with pink color.
# Serve them cold.


Note: If you don’t have icing sugar, you can use 1 tbsp butterfat.
